Best Sugar Cookie Recipe

I have been making these sugar cookies for ever.  I was looking at Bakerella’s site yesterday and saw the way she uses “flood” icing to frost cookies and I simply had to try it.

I’m out of frosting bags so my lovely daughter made a bag (she’s creative like that) and she used it to decorate some of the cookies.  By the time I got to the bag it was no longer serviceable, so I simply used a spoon to spread the icing. It worked great.  But, next time I’ll use a bag and pipe an outline on each cookie first before filling with the “flood”.

Rich Rolled Sugar Cookies

½ lb butter

2/3 cup sugar

Beat together then add:

1 egg

Beat then mix in and lightly knead:

¼ t baking powder

1/8 t salt

1 ½ t vanilla

2 1/3 cup flour

Roll out on a floured counter punch out shapes and bake 350 for 13 minutes.

Use the Royal Icing recipe the way it is to pipe the outline on the cookies.  Then add 1-2 T water and use that as the “flood” icing. It was hard enough to stack and give to neighbors within an hour.

Royal Icing

2 ½ c powdered sugar

3 T water

1 T butter

2 T corn syrup

½ tsp almond extract or vanilla extract

¼ tsp salt

Mix together.  Perfect for edible gingerbread houses or sugar cookies.
