Homemade Chicken Pot Pie

Place the following into a sauce pan and cover with water and boil 15 minutes.

1 lb boneless, skinless chicken cut into ½ inch cubes
1 cup sliced carrots
1 cup frozen green peas
½ c broccoli

(There is a lot of meat in here it’s just all at the bottom)  Now prepare the sauce.

Melt 1/3 c butter. While stirring with a wisk, add 1/3 c flour and following seasonings:
½ t salt, ¼ t pepper, 3 sprigs fresh marjoram, 1 t garlic powder, 2 T brown sugar, Sprinkle of cinnamon
Then slowly stir into roux:
1 ¾ c chicken broth
2/3 c milk

While stirring, let sauce boil until thickened.

Pour sauce over vegetables in 9-inch pie crust.

chicken pot pie 2Put top crust over pie and seal shut.  Cut design on top of crust. Bake in 425 degree oven for 30 minutes.  Let cool for 10 minutes before serving.

Chicken Pot Pie

Combine above ingredients into a sauce pan, cover with water and boil for 15 minutes. Remove from heat, drain and set aside. (If desired, can set aside ½ cup cooking liquid to replace ½ c chicken broth later.)
1/3 c butter
1/3 flour

Melt butter. While stirring with a wisk, add flour and following seasonings.

½ t salt, ¼ t pepper
3 sprigs fresh marjoram, 1 t garlic powder
2 T brown sugar, Sprinkle of cinnamon

Slowly stir into roux:
1 ¾ c chicken broth
2/3 c milk

Cook over medium heat until thickens. Remove from heat and set aside.

2 (9-inch) unbaked pie crusts
Spoon chicken mixture into pie crust and pour liquid over. Add top pie crust and cut a design on top. Bake 425⁰ for 30 minutes. Cool 10 minutes and serve.
