Halibut

This is my favorite way to prepare halibut.

When my parents were here a few months ago, they brought us seasoned salt they picked up right at the source in Richmond.  It is my new favorite seasoning.halibut 2Sprinkle season salt and pepper on both sides of the filet. halibut 1Then dip into flour.  Then put filets into eggs.

halibut 3Put filets into seasoned bread crumbs (or sometimes I make my own bread crumbs and season them myself).

halibut 4Fry on a skillet for 2 1/2 minutes on each side.

halibut 5 halibut 7Then bake in 450 degree oven for 20 minutes.

1 c bread crumbs

1 T fresh basil

1 T fresh parsley

1/2 t onion powder

1 large garlic clove

Mix above ingredients together and set aside.

1 large egg and 2 egg whites

whisk eggs together and set aside.

2 T flour

Put into a separate pan and set aside.

Season salt and pepper

Sprinkle season salt and pepper over halibut then dip into flour and coat evenly and entirely.  Then dip into egg mixture.  Finally put into bread crumbs mixture.

Cook 2 1/2 minutes on each side in a hot skillet.  Then put into 450 degree oven and bake for 20 minutes or until the fish is white through and done.
