Whole Roast Chicken

Whole Roast Chicken
3 t salt
2 t sugar
¼ t allspice
¼ t nutmeg
¼ t cinnamon
Combine spices together and rub all over whole chicken. Cover chicken and place in fridge for 24 hours.
Stuff cavity with 5 cloves of crushed garlic and bake 500⁰ for 15 minutes. Reduce heat to 450⁰ continue roasting 15 minutes. Baste chicken with drippings, reduce heat to 425, and continue cooking 30 minutes, to an internal temperature of 180⁰. Let stand 20 minutes before serving.

    The chicken looks GREAT!! Looks like one you would buy at the store only I know it would be much, much better. Love ya
